Wild spring greens! You all know this one!
Dandelion (Taraxacum officinale) or la-dent-de-lion in French.
A bitter edible weed that grows abundantly, stimulates digestion, is liver supportive and contains a long list of vitamins and minerals. According to data from the U.S. Department of Agriculture, dandelion is one of the most nutritious leafy greens available to us.
The roots of this common plant are best harvested in the early spring in the Northeast for food or wellness support. Soon the blossoms will be up to harvest. Dandelion flowers are also edible and used as a home remedy. Of course, the blossoms can also be used as flower essence.
